This beautiful looking brown-gray mushroom has a strong aromatic, earthy taste and a high umami content. The flesh is white and crispy. For these reasons, the youngest generation of top chefs like to use the maitake in vegetarian or vegan dishes. The maitake or egg tenderloin was originally cultivated in Japan. Now, just like in Japan, we grow it on sawdust packages.

Yummy
The taste of the maitake is best fried in butter or oil. It goes best with hearty flavors, such as roasted meat, grains and spicy (Asian) leafy vegetables. The maitake is also often added to a dish with other mushrooms to enhance the earthy mushroom flavor.
